Knockdhu is a pretty Speyside distillery whose whisky is more familiar to most malt fans as AnCnoc, the name used by owners Inver House to distinguish its official bottlings from rival Knockando. This 2012 Knockdhu came from Cask 7127, a single hogshead that yielded 312 bottles at a very poky 58.8%, so a drop of water will likely be required to tease out its nuances.

This is a heavily sherried dram that tastes of dates and raisins with a touch of honey and vanilla. It’s pretty soft and smooth without water but a few drops seem to thicken it up slightly and add hints of caramel. Absolutely gorgeous.
