A 7-year-old Dalmunach 2015 bottled in 2023 without colouring or chill filtration by Duncan Taylor for their Octave range.
Octave casks are made by disassembling a 500-litre sherry butt and rebuilding it into eight much smaller casks.
This Dalmunach began life in a standard cask before being finished in the octave, which yielded just 87 bottles at its natural cask strength of 55.2%. This is the oldest Dalmunach we've had so far and it looks very promising indeed.

This is a heavily sherried dram that tastes of dates and raisins with a touch of honey and vanilla. It’s pretty soft and smooth without water but a few drops seem to thicken it up slightly and add hints of caramel. Absolutely gorgeous.
