A wonderful 8-year-old Toutain XO calvados from Pays d'Auge, the top sub-region of Calvados. Toutain is an independent calvados producer, owned by the same family for five generations.
This Toutain XO 8-year-old is made by distilling a cider made mainly from apples but also containing perry pears - the cider is distilled to a strength around 68-72% and aged in large oak vats around 3000-4000 litres in capacity for the first five years and is then moved to smaller vats around half the size for the remainder of its maturation.

Nose: Fruity apple aromas with hints of flowers.
Palate: Smooth, a mix of apple and wood. It is fresh with minerals and a slightly peppery taste.

This is a heavily sherried dram that tastes of dates and raisins with a touch of honey and vanilla. It’s pretty soft and smooth without water but a few drops seem to thicken it up slightly and add hints of caramel. Absolutely gorgeous.
