Signatory Vintage's tiny Edradour distillery is a great place to visit should you ever be up Pitlochry way. If you're really lucky, Andrew & Des might even give you a peep in their mammoth warehouses rammed with their incredible collection of casks from all over Scotland.
Edradour's Straight From The Cask series always delivers and the sherry casks are the pick of the bunch. Edradour 2010 Cask 407 is a sherry butt - a pretty fresh one judging by the colour of the whisky - and has been bottled as a 10-year-old at full cask strength of 56.5%, yielding a whopping 894 of their 50cl bottles.

This is a heavily sherried dram that tastes of dates and raisins with a touch of honey and vanilla. It’s pretty soft and smooth without water but a few drops seem to thicken it up slightly and add hints of caramel. Absolutely gorgeous.
