Located on the south-east coast of Ireland, Waterford Distillery is known for its barley-forward, terroir-driven, compelling Irish single malt whiskey.
This second edition from Bannow Island forms part of Waterfords Single Farm Origin series and is made using 100% Irish malted barley.
The whiskey is four months older than the first edition and uses barley grown on the Southern coast of County Wexford. This extreme and rugged part of the world is home to Ed Harpur where the salt-laden Atlantic winds and sandy soils create a unique and challenging terroir for his farm.
This whiskey was matured in 36% first-fill American oak casks, 21% virgin American oak casks, 17% French oak casks and 26% were previously used to age Vin Doux Naturel (fortified wines) like in Sheestown 1.1.

Tasting Notes
Appearance: Honey with oils that grip the glass. Nose: A malty aroma on the nose with ripe pears, raisins and floral notes. Palate: Fruity notes greet the palate with honey, caramel, malted biscuits and a hint of spice. Finish: A long-lasting oiliness with a spicy heat finish that turns dry.
As you expect from a good Irish Whisky, this is wonderfully smooth, but it is also expressive of is barley drive roots. My eldest son raves about this being his favourite whisky, It’s a delightful dram.

It’s a fabulous single malt - first discovered in holiday to Scotland. Small batch whisky and is mostly used as a main component of a blended whisky. Lovely smooth taste
